This is a new book on food process engineering which treats the principles of processing in a scientifically rigorous yet concise manner, and which can be used as a lead in to more specialized texts for higher study. It is equally relevant to those in the food industry who desire a greater understanding of the principles of the food processes with which they work. This text is written from a quantitative and mathematical perspective and is not simply a descriptive treatment of food processing. The aim is to give readers the confidence to use mathematical and quantitative analyses of food processes and most importantly there are a large number of worked examples and problems with solutions. The mathematics necessary to read this book is limited to elementary differential and integral calculus and the simplest kind of differential equation.

Emphasizing basic mass and energy balance principles, Chemical and Energy Process Engineering prepares the next generation of process engineers through an exemplary survey of energy process engineering, basic thermodynamics, and the analysis of energy efficiency. By emphasizing the laws of thermodynamics and the law of mass/matter conservation, the author builds a strong foundation for performing industrial process engineering calculations. The book’s systematic treatment applies these core principles on a macro-level scale, allowing for more manageable calculations. The development of new processes is demanding and exciting. The instruction within these pages enables engineers to understand and analyze existing processes and primes them for participation in the development of new ones.

Process planning determines how a product is to be manufactured and is therefore a key element in the manufacturing process. It plays a major part in determining the cost of components and affects all factory activities, company competitiveness, production planning, production efficiency and product quality. It is a crucial link between design and manufacturing. There are several levels of process planning activities. Early in product engineering and development, process planning is responsible for determining the general method of production. The selected general method of production affects the design constraints. In the last stages of design, the designer has to consider ease of manufacturing in order for it to be economic. The part design data is transferred from engineering to manufacturing and process planners develop the detailed work package for manufacturing a part. Dimensions and tolerances are determined for each stage of processing of the workpiece. Process planning determines the sequence of operations and utilization of machine tools. Cutting tools, fixtures, gauges and other accessory tooling are also specified. Feeds, speeds and other parameters of the metal cutting and forming processes are determined.

Philosophy And Engineering Reflections On Practice Principles And Process

Building on the breakthrough text Philosophy and Engineering: An Emerging Agenda, this book offers 30 chapters covering conceptual and substantive developments in the philosophy of engineering, along with a series of critical reflections by engineering practitioners. The volume demonstrates how reflective engineering can contribute to a better understanding of engineering identity and explores how integrating engineering and philosophy could lead to innovation in engineering methods, design and education. The volume is divided into reflections on practice, principles and process, each of which challenges prevalent assumptions and commitments within engineering and philosophy. The volume explores the ontological and epistemological dimensions of engineering and exposes the falsity of the commonly held belief that the field is simply the application of science knowledge to problem solving. Above all, the perspectives collected here demonstrate the value of a constructive dialogue between engineering and philosophy and show how collaboration between the disciplines casts light on longstanding problems from both sides. The chapters in this volume are from a diverse and international body of authors, including philosophers and engineers, and represent a highly select group of papers originally presented in three different conferences. These are the 2008 Workshop on Philosophy and Engineering (WPE-2008) held at the Royal Academy of Engineering; the 2009 meeting of the Society for Philosophy and Technology (SPT-2009) at the University of Twente in the Netherlands; and the Forum on Philosophy, Engineering, and Technology (fPET-2010), held in Golden, Colorado at the Colorado School of Mines.

Consumer expectations are systematically growing, with demands for foods with a number of attributes, which are sometimes difficult for manufacturers to meet. The engineering processes that are needed to obtain top-quality foods are a major challenge due to the diversity of raw materials, intermediates, and final products. As in any other enterprise, the food industry must optimize each of the steps in the production chain to attain the best possible results. There is no question that a very important aspect to take into consideration when developing a process, designing a food factory, or modifying existing facilities is the in-depth knowledge of the basic engineering aspects involved in a given project. Introduction to Food Process Engineering covers the fundamental principles necessary to study, understand, and analyze most unit operations in the food engineering domain. It was conceived with two clear objectives in mind: 1) to present all of the subjects in a systematic, coherent, and sequential fashion in order to provide an excellent knowledge base for a number of conventional and unconventional processes encountered in food industry processing lines, as well as novel processes at the research and development stages; 2) to be the best grounding possible for another CRC Press publication, Unit Operations in Food Engineering, Second Edition, by the same authors. These two books can be consulted independently, but at the same time, there is a significant and welcomed match between the two in terms of terminology, definitions, units, symbols, and nomenclature. Highlights of the book include: Dimensional analysis and similarities Physicochemistry of food systems Heat and mass transfer in food Food rheology Physical properties Water activity Thermal processing Chilling and freezing Evaporation Dehydration Extensive examples, problems, and solutions
